Course Curriculum:

The Cook Basic Level I and the Cook Advanced Level II Diploma programs, include 5 weeks of theoretical based classroom instruction plus 10 weeks of practical based kitchen instruction.

The cooking methods are based primarily on French classical cuisine. The Cook Basic curriculum centers on culinary techniques, while the Cook Advanced program enhances the students’ creativity and allows them to expand on the culinary skills that were learned in Cook Basic.

The Cook Advanced program also provides students with the necessary skills and instruction to learn the art of managing a kitchen. The “Chef of The Day” events, which duplicate a restaurant setting, are run during the Cook Advanced kitchen portion of the program, allowing the students to put into practice the necessary skills to run a restaurant kitchen. The theory room is transformed into a dinning room capable of seating 50 guests. The student “Chef of The Day” plans the menu and then oversees the preparation and serving of the food to the guests.
