
Spicy Grilled Shrimp with Satay Dipping Sauce by Dominik Rosner

Satay Sauce
100g unsalted peanuts
50g butter
100g curry paste
150ml coconut milk
Honey and salt to taste
Step 1: Grind peanuts in food processor with the butter
Step 2: Heat peanut mixture and curry paste in sauté pan
Step 3: Gradually add coconut milk
Step 4: Finish with honey to balance the spiciness and salt to bring out the flavours
Mix together a light marinade and marinate the shrimp for about 15 minutes before grilling on wooden skewers:
Soy sauce
Rice wine vinegar
Honey
Minced Garlic & Shallots
Cayenne Pepper
Lemon Juice
